Puto Binan Ala Maya

500-gram pack Maya Butterscotch Brownie mix eggs

1/2 cup oil

2/3 cup water

salted egg or kesong puti.

Prepare a steamer and two 8-inch round baking pans. In a bowl, combine brownie mix, eggs, oil and water. Beat until smooth. Pour into pans. Top with grated cheese, sliced salted egg or kesong puti. Steam for 20 to 30 minutes or until done. Serve with grated coconut.


Adobo Flakes

1/2 Kilo chicken breasts, skinless

1/4 cup garlic, finely minced

2 tbsps Lea & Perrins Worcestersshire Sause

1/4 cup soy sauce

2 tbsps vinegar

2 tsps coarse salt

2 tsps peppercorn, freshly ground

2 tbsps corn oil enough cooking oil for deep-frying

Boil chicken breasts and garlic in Lea & Perrins Worcestershire Sauce, soy sauce, vinegar, salt, pepper and corn oil till cooked and sauce is reduced to almost dry. Drain remaining sauce, setting sauce aside for other uses. Flakes chicken using two forks or hands with gloves. Spread flaked chicken on a tray and air-dry for about an hour. In very hot oil, deep-fry flakes in small batches till crispy and golden brown. Remove and drain excess oil with paper towels. If not all the flakes are crispy, it means that chicken flakes are too thick. Flakes into thinner threads and bake in a preheated oven and bake till crisp for another 5 minutes at 250 F.
